It was a busy day tasting at the french wine fair at Tobacco Dock on Tuesday. There were 120 producers from all over France presenting their wines. Mostly small producers and many with organic wine making methods and even some with biodynamic influences on their methods. I concentrated on the organic producers and I found some really good wines amongst them. So it proves that you can make good wine using organic ways. It is certainly harder and more effort has to be put into the processes in the vineyard and in the wineroom but for me it produces a much more natural nose and taste. Using natural yeasts and minimal intervention makes for a better wine. The problem is that it can be unpredictable and very different every year you make your wine. Using the commercial processes, as I call them, of say for example, buying in a yeast that will give you a predictable outcome or a bacteria for your malolactic fermentation unfortunately affects the end product and makes it more uniform. I love the yearly cycle of tasting wines from year on year and seeing the difference in nose and taste. That is the joy.
