Here is our fourth cocktail from our friends from Knappogue Castle Single Malt Irish Whiskey. As you might expect they have some great ideas on how to enjoy the taste of their aged whiskeys. Joann Spiegel from the award winning Dead Rabbit Grocery & Grog in New York City has got some awesome cocktail recipes so here goes with the first one  here on gfwineblog. Superdooper.

No 90 in our list of cocktail recipes:

Red Rebel

1 1/2 oz. Clontarf Irish Whiskey

3/4 oz. sugar syrup

3/4 oz. Dubonnet Rouge

1/4 oz. Saint Germain

1/2 oz. pomegranate juice

1/2 oz. lime juice

2 dashes DR Orinoco bitters

2 mint leaves

Fentimans Tonic

Lime wedge 

Shake ingredients over ice.

Double strain into ice filled highball.

Top with tonic and lime wedge.

Wine News

Some wine news about our local wine from St Nicolas de Bourgeuil on loirewinetoursblog.

My tasting this week is a St Nicolas de Bourgueil AOP rouge I found in the wine fair in Angers which has won a gold medal this year. Domaine Oliver. The appellation lies on the north bank of the Loire river north of Chinon.

The estate was established in 1959 by Bernard Oliver. The domaine was gradually developed over the next 20 odd years and in 1983 Patrick Oliver joined his father running the estate of some ​​14 hectares of vines. Today Patrick now runs a vineyard of some 56 hectares.

Since 2006, Oliver has used sustainable agriculture in the vineyard with respect to the environment under the Terra Vitis umbrella.

The various parcels provide a wide variety of terroir with the soils of sand and gravel that have a bearing on the grapes and the wines they produce. There is great respect of the terroir on the estate.

The Cabernet Franc grape of the AOP allows the development of fruity, elegant and balanced wines which are the major assets of Saint Nicolas de Bourgeuil wines.

This wine I tasted is produced on an area of ​​2 hectares of old vines over 55 years old located on clay-limestone soils. This soil provides wines with opulence. After the fermentation and maceration , this wine is aged for 12 months in oak barrels to achieve a wine with oaky and sophisticated characters. They improve with 4-6 years of aging.

The colour is of garnet with aromas of ripe red fruit, a nose reminiscent of blackberry and cassis. It is structured and rounded with earthy notes and a hint of vanilla.

I would pair this wine with a roast of lamb and well hung game, or venison. Serve at a temperature of 17-18C and make sure you let it breath well before drinking. Cheers.
