  If you are passing through the Loire why not pop into the Enfin du Vin in Candes St Martin. Its a jolly good place to have a light lunch of Saucisson and fromage with a wine from a great selection. We plumped for a bin end 2010  Muscadet Serve et Maine from Vincent Caille. In the Loire you have to first and foremost think vintage and 2010 was just that. Structured with deep peach flavours just right with our fine array of cheeses. A lovely day out on the Loire/Vienne rummaging amongst the antiques and bric a brac at Montsoreau. Busy.

Cerdon is a terroir of Bugey.
It’s a rose sparkling wine with low alcohol content (7.5%). It is produced from Gamay and Poulsard, following the traditional techniques of the “Méthode Ancestrale”

The “Méthode Ancestrale” is a fermentation technique that makes it possible to obtain a sparkling wine without the addition of any yeast or sugar. The first fermentation is stopped by cooling during the process to keep some of the sugar. The wine is put into bottles and then allowed to ferment the remaining sugars and yeasts to allow the retention of the carbon dioxide in the bottle.
This fermentation process is natural, and uses only the yeasts and sugars contained in the grapes.

A first phase happens in thermo-regulated tanks, where the fermentation process starts.
After a light filtration, the wine is bottled, and fermentation process continues, producing the bubbles and the fine foam.

The Loire valley 2016 wine vintage looks to be a difficult one after the weather we have been having in the Loire valley this year. We started with a mild winter so the first problem has been the snail larvae that has survived and is now a big problem in the vineyards. Secondly the early warm weather meant earlier than usual budding. This is not a problem in itself but we can get late frosts in the Loire and so it was. Some vineyards have seen a complete loss. Others have seen less damage but there will inevitably be a reduction in yield this year. Added to all that we had damp wet conditions during the flowering in June and this has led to berries not developing on the bunches. Again a loss of yield will result. So not a good start to the 2016 vintage.

Here is our fourth cocktail from our friends from Knappogue Castle Single Malt Irish Whiskey. As you might expect they have some great ideas on how to enjoy the taste of their aged whiskeys. Joann Spiegel from the award winning Dead Rabbit Grocery & Grog in New York City has got some awesome cocktail recipes so here goes with the first one  here on gfwineblog. Superdooper.

No 90 in our list of cocktail recipes:

Red Rebel

1 1/2 oz. Clontarf Irish Whiskey

3/4 oz. sugar syrup

3/4 oz. Dubonnet Rouge

1/4 oz. Saint Germain

1/2 oz. pomegranate juice

1/2 oz. lime juice

2 dashes DR Orinoco bitters

2 mint leaves

Fentimans Tonic

Lime wedge 

Shake ingredients over ice.

Double strain into ice filled highball.

Top with tonic and lime wedge.

  Hey a run over the chateau de Brossay in Anjou country in the Loire valley France. Only the best place to be in France people. Soft and sensual. Benjamin was on hand to do a tasting for our friends. Pam, Mick, Helen, Norman, Ewan and Di. After a tasting and contemplation we departed with 115 litres of wine. Thank you very much indeedy.
